Priamis Rosso Barletta DOC

Winemaking
The Priamis is one of “Nero di Troia” wines, obtained by winemaking of grapes selected by Passionero brand.
The hand harvested grape is sent to fermentation tanks. On the first day of fermentation, wine undergoes a slight bloodletting of 20% maximum, in order to increase its concentration. The maceration with skins lasts 15 days at a controlled temperature of 28 °C in concrete tanks. After racking, wine rests in stainless steel tanks until malolactic fermentation is completed, that usually takes place in November; then it immediately goes into new barriques where it ages for 12 months before being bottled and rests for at least 6 months before being placed on the market.
Organoleptic description
Deep ruby red color. The sent is generous, with ripe fruit, licorice, spices and vanilla notes.The taste is bodied, soft with a great balance, persistent; on the whole is harmonius.

Excellent in combination with red meat, game, cold cuts and ripened cheese.
